The Best Birria Tacos
I already shared my Mom’s birria recipe but I had to take my own spin on it and make it a different way that I believe is much better. Sorry Mom! I still believe your cooking is amazing…. Don’t come after me.
After I started making birria this way I have not turned back and it’s so delicious! My friends can vouch for that since I invite them over everytime I make a large batch. I’ve used the birria for tacos, ramen, quesadillas, grilled cheese, you name it. The beef is tender and the broth, also known as consume, is packed with so much flavor from the spices and chiles used in this recipe.
What is Birria?
Birria is a Mexican dish that is made from a combination of chili peppers, garlic, bay leaves, thyme and cumin. The meat used is usually beef but can also be goat. You can use the birria to make tacos, quesadillas, grilled cheese, you name it! I love serving the birria tacos/quesadillas with cilantro, onions and lime wedge. Absolutely delicious!
The Best Birria Tacos
Ingredients:
- 5 lbs Beef Chuck Roast (cut into 2-3 inch pieces)
- ½ White Onion
- 1 Head Garlic + 6 Garlic Cloves
- 4 Bay Leaves
- 10 Guajillo Chiles
- 3 Ancho Chiles
- 6-8 Chile de Arbol (add more if you want it spicier)
- 6 Peppercorns
- 5 Whole Cloves
- 1 tsp of Oregano
- 1 tsp of Thyme
- 2 tsp of Cumin
- 2-3 tbsp of Beef Bullion
- 1-2 Tbsp Salt
- 10 cups of Water
- Cilantro, onions and limes (optional)
Directions:
- In a large pot add 8 cups of water then add the beef, onion, head of garlic, bay leaves and salt. Boil for 1 hour on medium high heat and skim off the fat that floats to the top.
- In a separate pan, add 1 tbsp of oil then add your chili peppers and garlic and toast on medium heat for about 2-3 minutes making sure to move them frequently so they don’t burn. Transfer to the blend then add 5 peppercorns, 5 whole cloves and 2 cups of water. Take the onion and garlic head that is cooking with the beef and place it in the blender as well. Blend until the sauce is smooth.
- With a fine strainer, strainer the sauce into the large pot with the beef. Use a spoon to stir the sauce around and help it go through the strainer. Discard the pulp that’s left in the strainer.
- To the large pot, add in your remaining seasonings – oregano, thyme, cumin and beef bouillon. Cover and simmer on low heat for about 2 hours or until the beef is fork tender.
- Enjoy the birria by making tacos, quesadillas or ramen! My favorite toppings are always lime, cilantro and onion.
# Tips
When toasting your chiles make sure to only toast them until fragrant and try not to burn them because they can burn quickly if your heat is too high.
If you want to adjust the spice level of the broth just adjust the amount of chile de arbol you put in.
