This is hands down the best pork in salsa verde recipe you’ll ever come across! The meat just falls off the bone and the salsa has such great flavor with a kick at the end. This one I gotta thank my Mama for. 

She taught me this years ago and I’m forever grateful for it. Spice level is easily adjustable to those who want it even spicier or aren’t a fan of spicy food at all. This goes well with rice and/or beans and of course tortillas. 

One thing my mom still does to this day is anytime we are invited somewhere she brings food. When I was in middle school I remember being dropped off at my friends house for a sleepover. 

My mom insisted on dropping me off with a pot of pork in salsa verde to give to the parents. I was so embarrassed. None of my other friends brought food over when they visited. But my friends parents would be so excited to receive food from Juanita(my mom)

For a while I seriously didn’t get it. It’s just food I had during the week. Nothing special. With time I realized the food I was eating wasn’t what everyone else was having. My mom’s food was on a different level! 

I would go to mexican restaurants and order things my mom would make and think man my mom could make this so much better. So here is my Mom’s pork in salsa verde. The absolute best!

What is Pork in Salsa Verde?

Pork in salsa verde is exactly what it sounds like. It’s pork in a spicy green salsa made with tomatillos, serranos, cilantro, onions and garlic. To clarify, green in Spanish is verde.

How to Make Pork In Salsa Verde 

Ingredients 

  • 2 lbs of pork (rib tips, pork butt, or shoulder cut into pieces)
  • 1 lbs of tomatillos 
  • 3 serranos 
  • ¼ onion
  • 3 garlic cloves 
  • Handful of cilantro 
  • 1 tsp chicken bullion 
  • Salt to taste
  • ¼ cup water 
  1. Rinse pork with cold water until clean. Add pork to a pot and put enough cold water so the pork is barely covered with water. Turn on the heat to medium and bring to a boil then cover with a lid and let it go for 25 mins.
  2. In the meantime, rinse your tomatillos and serranos and place them in a small pot with enough water to cover them. Turn the heat on to medium-high and let it come to a boil. They’ll be ready when they go from a bright green color to a off green color. About 8-10mins. Remove from heat. 
  3. To a blender add onion, garlic, cilantro, chicken bullion, salt, ¼ cup of water, cooked tomatillos and serranos and blend for about a minute. Taste and add salt if needed. Set aside. 
  4. For the pork, after 25 mins remove the lid, keep boiling and let all the water evaporate. This can take about 15mins or more. Once all the water has evaporated, you’ll be able to fry the pork in its own fat. Make sure to stir often so each piece is browned evenly. 
  5. Once the pork is golden brown, pour in the salsa verde and simmer for 10 mins. 
  6. Taste for seasoning and its ready! Serve with rice and tortillas.
