The Best Apple Streusel Cheesecake Bites
Fall is truly a remarkable season and one of my favorite times to start baking and what better way to start off the fall season than with my apple streusel cheesecake bites. The sweet and tart flavors of these apples perfectly complement the warm spices and cheesecake filling creating a comforting and nostalgic experience. I enjoyed making these with the help of my toddler who liked mixing the apples and topping off each cheesecake with the apple and streusel mixture.
I don’t know about you but when fall hits it finally gives us the chance to relish in the cool weather especially after the sweltering heat of summer in Texas. It’s a time to embrace cozy sweaters, scarves, and boots while enjoying walks in the park and finally getting to bake in our homes. These apple cheesecake bites are my absolute favorite and recently made these and shared them with our neighbors who texted me asking for the recipe.

Some tips*
- Make sure your cream cheese is softened to room temperature. This will make it easier for everything to mix smoothly. What you don’t want is big chunks of cream cheese to be in your mixture because that will leave you with a weird texture after baking. So making sure it is at room temp is key!
- I love using honeycrisp apples for this recipe but granny smiths are also great!
Apple Streusel Cheesecake Bites
Ingredients
For the crust:
- 1-1/4 cups of graham cracker crumbs (1 sleeve of graham crackers)
- 1/4 cup of unsalted butter, melted
The filling:
- 16 oz of Cream Cheese, softened
- 1/2 cup of Granulated Sugar
- 2 eggs
- 1 tsp of vanilla extract
- Pinch of salt
For the Apples:
- 2 medium apples, peeled and diced (Use granny smith or honeycrisp)
- 2 tbsp sugar
- 1 tsp cinnamon
For the Streusel:
- ⅓ cup of oats
- ⅓ cup of flour
- ¼ cup of dark brown sugar
- ¼ tsp baking powder
- ½ tsp cinnamon
- 3 tbsp cold butter, cut into small cubes
Preparation
1) Preheat your oven to 350 degrees and line a muffin tin with paper liners, set aside.
2) In a food processor, pulse crackers until they are crumbs and add the butter and pulse until you get a wet sand like mixture. Take about a tablespoon of mixture and place it in each cup of the muffin tin and press it down with the back of a spoon or small glass to compact it in the bottom.
3) In a bowl add the cream cheese and sugar and mix until smooth. Add eggs one at a time and mix well. Add the salt and vanilla and mix until well combined. **make sure your cream cheese is softened so you get a smooth texture at the end!**
4) Divide the mixture evenly among the muffin cups. Set aside.
5) In a bowl, add your diced apples, sugar and cinnamon and give it a good toss and set aside to make the streusel.
6) In a bowl, add the oats, flour, brown sugar, baking powder, cinnamon and cold butter. Using a pastry cutter or a fork, cut/mix everything together until you get a crumbly texture. Do not overmix! You want to have some buttery clumps.
7) Top each cheesecake with the apple mixture and then the streusel on top. Pop them in the oven for about 15 to 18 minutes or until the sides are pretty set, allow to come to room temp then place in the fridge for at least 5 hours or overnight for best results.
8) Remove cupcake liners from each cheesecake bite and they are ready to serve!
