These BBQ pulled chicken sliders are perfect to make for your upcoming super bowl party or anytime you have friends/family over! I like to make my homemade dinner rolls for these and they turn out so freakin’ good! When I’m short on time though I use store bought Hawaiian rolls. 

Sliders are such a great food item for a superbowl party or gathering. You can have a slider along with all the other yummy finger foods available and not feel stuffed. 

I personally love using chicken thighs over chicken breast. The flavor you get from using thighs I think makes a huge difference but I also know chicken thighs aren’t everyone’s cup of tea. So feel free to swap out chicken thighs for breasts. 

I love how when you cook you can always adjust things to your liking. Choose your favorite bbq sauce, rolls, and add anything else you think will make it better. 

What are BBQ Pulled Chicken Sliders?

BBQ pulled chicken sliders are small bbq chicken sandwiches served on rolls. Typically a slider is known as mini hamburgers. Here it is chicken that is shredded and cooked with BBQ sauce then served in rolls. I like to use homemade rolls or store bought Hawaiian rolls. 

How to Make BBQ Pulled Chicken Sliders

Ingredients 

  • 2 lbs of Boneless Skinless Chicken Thighs
  • 2 tbsp of Neutral Oil, I used Avocado Oil
  • 1 Onion, finely sliced
  • 1 tsp of Onion Powder
  • 1 tsp of Garlic powder
  • 1 tsp of Chili Powder
  • 1 tsp of Paprika
  • ½ tsp Black Pepper
  • 1/2 cup of Chicken Stock
  • 1/2 cups of BBQ Sauce 
  • Salt 
  • 1 dozen rolls, I like to use Hawaiian rolls or my homemade dinner rolls 

Directions

  1. In a large skillet with high sides turn heat to medium high and add the oil. Let it get nice and hot while you prepare the chicken. 
  2. In a small bowl, mix together your dry spices. Sprinkle the chicken with the spices along with salt. 
  3. Once the skillet is hot add the chicken in and cook them for about 4 minutes on each side or until golden brown. Remove the chicken onto a plate. (The chicken will not be fully cooked yet)
  4. Add the sliced onions to the skillet and cook them for until they become soft, about 3-4 minutes.  
  5. Add the chicken back into the skillet along with the chicken stock and cover with a lid. Cook for about 15 minutes or until fully cooked though. 
  6. Remove the chicken from the skillet onto a plate and let it cool for a few minutes before shredding. Using two forks shred the chicken.
  7. Return the shredded chicken back into the skillet with your bbq sauce and give it a mix then cover with a lid and cook on medium heat for 10 minutes. Remove from heat when done.
  8. Grab your rolls and slice them in half. Add the shredded chicken to each roll and close them up with the top part of the roll and they are ready to serve!

# Tips 

I personally like sliders just like this but if you want you can add some cheese or slaw to it but this is my favorite way to eat them. 

You can toast your rolls in the oven for a few minutes before assembling them. Heat your oven to 350 and place them in the oven for a few minutes. 

I love using chicken thighs for this recipe because I personally think chicken thighs taste better and more flavorful but you can swap the meat out for chicken breast if you’re not a fan of thighs. 

You can also toast some buns and make these into sandwiches.
