BBQ Pulled Chicken Sliders

These BBQ pulled chicken sliders are perfect for the upcoming super bowl or for any gathering! The chicken is seasoned, cooked, shredded and tossed in bbq sauce then served on delicious rolls.

- 2 lbs of Boneless Skinless Chicken Thighs
- 2 tbsp of Neutral Oil I used Avocado Oil
- 1 Onion finely sliced
- 1 tsp of Onion Powder
- 1 tsp of Garlic powder
- 1 tsp of Chili Powder
- 1 tsp of Paprika
- ½ tsp Black Pepper
- 1/2 cup of Chicken Stock
- 1/2 cups of BBQ Sauce
- Salt
- 1 dozen rolls I like to use Hawaiian rolls or my homemade dinner rolls
In a large skillet with high sides turn heat to medium high and add the oil. Let it get nice and hot while you prepare the chicken.
In a small bowl, mix together your dry spices. Sprinkle the chicken with the spices along with salt.
Once the skillet is hot add the chicken in and cook them for about 4 minutes on each side or until golden brown. Remove the chicken onto a plate. (The chicken will not be fully cooked yet)
Add the sliced onions to the skillet and cook them for until they become soft, about 3-4 minutes.
Add the chicken back into the skillet along with the chicken stock and cover with a lid. Cook for about 15 minutes or until fully cooked though.
Remove the chicken from the skillet onto a plate and let it cool for a few minutes before shredding. Using two forks shred the chicken.
Return the shredded chicken back into the skillet with your bbq sauce and give it a mix then cover with a lid and cook on medium heat for 10 minutes. Remove from heat when done.
Grab your rolls and slice them in half. Add the shredded chicken to each roll and close them up with the top part of the roll and they are ready to serve!
