These cheesy garlic rolls are perfect for all you garlic bread lovers!! I can’t tell you how great these came out. The dough is so fluffy and you have garlic and cheese rolled throughout the dough. Every bite is out of this world.

I love bread and cheese and really wished I made these when I was pregnant because this is exactly what I would crave. It’s like garlic bread but it’s rolled in a fluffy yeast dough with mozzarella cheese.

What are Cheesy Garlic Rolls?

This recipe uses a fluffy yeast dough and is rolled out similar to cinnamon rolls but has a garlic and mozzarella cheese filling. Rolled tightly, cut into 16 even rolls and baked to perfection.

These are always a hit with my friends and family. I love making these when it starts to get cold outside. Baking warms up our place and fills the air with the best garlic bread scent ever.

How to Make Cheesy Garlic Rolls

Ingredients 

For dough:

  • 3 ½ cups of all purpose flour + more for dusting 
  • ¼ cup granulated sugar 
  • 1 tsp salt 
  • 1 yeast package + 1 tsp of sugar 
  • 1 cup of whole milk
  • 1 egg
  • ¼ cup butter, melted 

For garlic butter filling 

  • ½ cup unsalted butter, softened 
  • 1 tsp of salt 
  • 3 garlic cloves, minced 
  • 1 bunch of parsley, minced 
  • 2 cups of shredded mozzarella cheese

Directions

  1. Add milk to a microwave safe bowl and warm up to 120 degrees F. (You want it warm enough to activate the yeast but if it’s too hot it will kill the yeast.) Then add 1 tsp of sugar and give it a quick stir. Sprinkle over your yeast and set aside for about 5 minutes to activate. It will become foamy at the top.
  2. In a large bowl, add the flour, sugar, salt and whisk to combine then add the yeast mixture, egg and melted butter and with a wood spoon mix as much as you can before placing it on a well floured surface and knead it with your hands for a few minutes or until you get a nice smooth dough. Place in a lightly oiled bowl and cover with plastic wrap. Place in a warm spot until doubled in size. About 1.5 hours
 (Don’t worry if the dough is sticky coming out of the bowl. Kneading it and adding a little flour will make your dough perfect.)  
  1. For the garlic butter filling, in a bowl add the butter, salt, garlic and parsley and mix with a spatula until you have a creamy mixture. Set aside. (Make sure butter is softened. It will make mixing so much easier!) 
  2. Line a baking sheet with sides with parchment and spray with nonstick spray and set aside. 
  3. Lightly flour your surface and roll out the dough to about a 16in x 10in rectangle. With a spatula, evenly smear your garlic butter mixture on the dough and sprinkle the cheese all over. 
  4. Starting from the long side, roll tightly into a jelly roll. Cut into 16 even rolls and place them on the prepared baking sheet and let them rest for about 1 hour.
  5. Preheat your oven to 350 and bake them for 30 min or until golden brown. Let them cool for about 10-15 minutes before serving and enjoy!

# Tips 

When mixing the dough, if it’s too sticky, slowly add flour until you get a nice smooth dough. I like to dust my work surface with flour and knead the dough and slowly add flour if needed. That helps me get the perfect fluffy dough.

When activating your yeast make sure your milk isn’t too hot or too cold. If it’s too hot it will kill the yeast and if it’s too cold it won’t activate.

Mince the garlic as fine as you can or if you have a fine grater then you can grate your garlic.
