Chilaquiles verdes are one of the best Mexican breakfast dishes ever! The tortilla chips are covered with this delicious spicy green sauce then topped with a fried egg and some crumbled queso fresco and finally drizzled with crema mexican. 

My mom’s cooking is hands down the best and waking up to these for breakfast always started my day off right. 

I’m thrilled to share her authentic Mexican recipe with you so you can make these at home and get to taste the best chilaquiles verdes you’ve ever had. 

What is Chilaquiles Verdes?

Chilaquiles is a Mexican dish consisting of pieces of corn tortillas that are fried, then sautéed with green or red salsa, in this case, green salsa. Then topped with cheese and crema mexicana.

How to Make Chilaquiles Verdes 

Ingredients

  • 1 lb Tomatillos 
  • 3 Serranos, stems removed
  • ¼ Onion, roughly chopped 
  • 2 Garlic Cloves 
  • ½ cup of Water
  • 1 handful of Cilantro
  • Salt, to taste
  • 1 tsp of Chicken Bullion 
  • Neutral Oil, I used Avocado Oil
  • Thick tortilla chips or homemade tortilla chips 
  • Fried Sunny Side Eggs, or to your liking
  • Queso Fresco, to sprinkle on top
  • Crema Mexicana, to drizzle on top
  • diced onion and cilantro, for garnish (optional)

Directions

  1. In a pot, add the tomatillos and serranos and add enough water to cover them. Place on the stove and heat on medium high and bring to a boil. Boil them for 5 mins or until they change to a yellow-green color. 
  2. In a blender add the onion, garlic, water, cilantro, chicken bullion and cooked tomatillos and serranos and blend. Add salt to taste. Set aside.
  3. Using a pan with high sides, heat up 1 tbsp of oil. When hot remove the pan from the direct heat right before you add the green salsa. Pour the salsa in and give it a stir. Return to the heat and simmer for 5-7 mins. 
  4. In the meantime, make the eggs the way you want them.
  5. Remove the salsa from the heat and add the tortilla chips and give it a toss until each chip is coated in the green salsa. 
  6. On a plate, add some of the chips that are covered in the sauce, spooning some of the green salsa right on top then drizzle with crema mexicana, sprinkle with queso fresco and finally top it with your cooked eggs. Finish with diced onions and cilantro if you’d like. Bon Appetit!

# Tips

For the tortilla chips, if you’re going to buy them at the store, get the ones that are thick and made from a local shop. Don’t buy the tortilla chips that are like Tostitos. They will get soggy. If you can’t find any at your store just get corn tortillas and cut them into triangles and fry them up at home. Best tortilla chips ever!  

For the eggs, cook your eggs the way you like it. Sunny side up, over medium, scrambled. Whatever floats your boat.
