Ingredients

  • 1 lb Tomatillos
  • 3 Serranos stems removed
  • ¼ Onion roughly chopped
  • 2 Garlic Cloves
  • ½ cup of Water
  • 1 handful of Cilantro
  • Salt to taste
  • 1 tsp of Chicken Bullion
  • Neutral Oil I used Avocado Oil
  • Thick tortilla chips or homemade tortilla chips
  • Fried Sunny Side Eggs or to your liking
  • Queso Fresco to sprinkle on top
  • Crema Mexicana to drizzle on top
  • Diced onions and cilantro for garnish

Instructions

  • In a pot, add the tomatillos and serranos and add enough water to cover them. Place on the stove and heat on medium high and bring to a boil. Boil them for 5 mins or until they change to a yellow-green color.
  • In a blender add the onion, garlic, water, cilantro, chicken bullion and cooked tomatillos and serranos and blend. Add salt to taste. Set aside.
  • Using a pan with high sides, heat up 1 tbsp of oil. When hot remove the pan from the direct heat right before you add the green salsa. Pour the salsa in and give it a stir. Return to the heat and simmer for 5-7 mins.
  • In the meantime, make the eggs the way you want them.
  • Remove the salsa from the heat and add the tortilla chips and give it a toss until each chip is coated in the green salsa.
  • On a plate, add some of the chips that are covered in the sauce, spooning some of the green salsa right on top then drizzle with crema mexicana, sprinkle with queso fresco and finally top it with your cooked eggs. Finish with diced onions and cilantro if you'd like. Bon Appetit!
