How to make Taco Jalapeno Poppers

Ingredients

  • 12 jalapeños
  • 6 oz of cream cheese, softened
  • 1/2 lb ground beef
  • 1 Roma tomato, finely chopped
  • 1/2 onion, finely chopped
  • 2 tbsp cilantro, minced
  • 1 cup cheese (I used a Mexican blend)
  • Taco seasoning, to taste
  1. Preheat a pan on medium high. Add in ground beef and cook until fully cooked about 5-7 minutes then add taco seasoning and mix well. Place in a bowl and work on the jalapeños while it cools a bit.
  2. Preheat the oven to 400 degrees. Cut jalapeños in half keeping the stem on if possible. Remove seeds and veins.
  3. With a small spoon add some cream cheese to the inside of your jalapeño leaving some room for the ground beef.
  4. Add about a tsp of the ground beef to the jalapeño with the cream cheese and using the back of the spoon press down to help the beef stick to the cream cheese. Repeat until all jalapeños are filled.
  5. Place the filled jalapeños on a nonstick baking sheet and bake for 16 mins. Remove from the oven and top the jalapeños with the cheese. Place back in the oven and bake for an additional 5mins.
  6. While they are baking, dice up the tomato, onion and cilantro. In a bowl, mix them all together and set aside.
  7. Once the jalapeño poppers are done, wait 10 minutes before moving them to a serving tray and topping them off with the tomato, onion and cilantro mixture. Serve right away and Enjoy!

Tips

Make sure the cream cheese is softened at room temperature. It will make it so much easier to spread on the jalapeno.

For the taco seasoning you can use store bought or try making it yourself. Recipe below. I didn’t add salt to the taco mix so that I am able to control how much salt I put in the dish. So add as much of the taco seasoning as you want and then add salt separately to your dish.

Make these and thank me later! My friends and family are always asking me to make them when we have game night or as an appetizer for when we have a dinner party. Trust me, they are delicious!
