Taco Jalapeno Poppers

These taco jalapenos poppers are filled with cream cheese, seasoned ground beef and top with cheese and pico de gallo!

- 12 Jalapenos
- 6 oz cream cheese softened
- 1/2 lb ground beef
- 1 roma tomato finely chopped
- 1/2 onion finely chopped
- 2 tbsp cilantro minced
- 1 cup Mexican blend cheese shredded
- Taco Seasoning to taste
Preheat a pan on medium high. Add in ground beef and cook until fully cooked about 5-7 minutes then add taco seasoning and mix well. Place in a bowl and work on the jalapeƱos while it cools a bit.
Preheat the oven to 400 degrees. Cut jalapenos in half, keeping the stem on if possible. Remove seeds and veins.
With a small spoon add some cream cheese to the inside of the jalapeno leaving some room for the ground beef.
Add about a tsp of ground beef to the jalapeno and using the back of the spoon press down to help the beef stick to the cream cheese. Repeat until all jalapenos are filled.
Place the filled jalapenos on a baking sheet that is lined with foil and bake for 16 minutes. Remove from the oven and top the jalapenos with cheese. Place back in the oven for an additional 5-7 minutes.
While they are baking, mix the diced tomatoes, onions and cilantro in a bowl and set aside.
Once the jalapenos are done wait 10 minutes before moving them to a serving tray. Top them off with the tomato, onion and cilantro mixture. Serve right away and enjoy!
