Cuisine Mexican
- 3 lbs of Beef Chuck Roast
- 1 Small Yellow Onion sliced
- 2 Garlic Clove minced
- Salt and pepper to taste
- 1 tsp Garlic Powder
- 2 tbsp of Water
- 1 tbsp of Oil I used Avocado Oil
Remove the beef from the fridge and let it come to room temperature before cooking. About 30-45 mins.
Turn on the saute mode on your instapot and set for 25 mins. Add the oil and let it preheat and get nice and hot. In the meantime, season both sides of the beef with salt, pepper and garlic powder.
When the instapot is hot add the beef and sear on both sides until you get a deep brown color. (About 6-8mins on both sides)
Remove the beef and place it on a plate. Set aside.
If the instapot is dry you can add a little bit of oil and then add the onions and cook for a few mins until they start developing color.
Add the garlic and cook for 30 seconds then add 2 tbsp of water and the beef back in.
Place the lid on the instapot and set the pressure to high and cook for 1 hour and 20 mins.
Once the timer goes off, release the pressure by turning the tab on the top of the instapot to vent.
Remove the beef and with a fork shred the beef and place it back in the instapot with all the juices. Give it a quick toss and it's ready!
If there are too much juices after cooking the beef simply remove the cooked beef and turn on the sauté mode on the instapot and let it simmer for about 5-8mins or until broth is reduced by half and then add the shredded beef in.
